Ciolim—cholla buds—have sustained the Tohono O’odham for countless generations. Just before the buckthorn cholla cactus flowers in the spring, its buds are hand picked, cleaned of their many thorns & dried for use year round. Cholla buds are incredibly healthy. They have high amounts of calcium and because they contain soluble pectin, they are good for those experiencing diabetes as they slow down digestion of sugars & other carbohydrates. Our Mesquite Flour can be used in all types of cooking but is most commonly used in baking these days. Due to it’s lack of gluten, it is best used in small amounts when baking. On average, substitute 1/2 cup of your regular flour with mesquite flour to add extra nutrients, protein and provide that distinct sweet, nutty, mesquite flavor. - $7 each (0.5 LB bag)

Considered the oldest wheat in the Western Hemisphere, White Sonora Wheat is a versatile grain and is excellent for making cemit (tortillas) and pastries. While relatively high in protein, it is low in gluten (though NOT gluten free). This characterizes it as a "soft" wheat. - $8 each (1 LB bag)
